Perfect for blowing the cobwebs away, this warming soup features plum tomatoes, carrot and thyme. Finish by stirring through crème fraîche and serve with plenty of crusty bread.

  1. Ingredients
  2. onion 1, roughly chopped
  3. garlic 2 cloves, crushed
  4. carrot 1, diced
  5. olive oil
  6. thyme leaves from 2 sprigs
  7. chicken or vegetable stock 750ml
  8. plum tomatoes 2 × 400g tins
  9. tomato purée 1 tbsp
  10. half-fat crème fraîche ½ 200g tub
  1. Method
  2. STEP 1
  3. Cook the onion, garlic and carrot in 1 tbsp oil until softened, about 5 minutes.
  4. Add the thyme, stock, tomatoes and tomato purée, and simmer for 15 minutes until slightly thickened.
  5. Pour into a blender and blend until smooth. Stir in the crème fraîche and serve.
