Lemon and horseradish prawns with fettucini

Low-Gi and full of fresh, punchy flavours, this prawn fettucini dish is the perfect lunch or a light dinner, plus, it’s ready in just 15 minutes.

  • fettucini 200g
  • cooked peeled prawns 200g
  • horseradish cream 1 tbsp
  • lemon ½ zested and juiced
  • rocket 2 handfuls chopped

  • STEP 1
  • Cook the fettucini following the packet instructions. Heat a little oil in a pan and quickly toss the prawns through it, don’t cook them for too long though as they just need heating through. Add the horseradish, lemon zest and juice and rocket and stir until just heated through, season well. Serve the fettucini with the prawns spooned over.

Prawn aguachile salad

Check out our quick and easy prawn aguachile salad recipe. Aguachile’ means ‘chilli water’ in Spanish, referring to the fiery dressing. Traditionally, raw prawns would be used but we’ve used cooked here to cut down on time

Prawn aguachile salad

Ingredients
  

  • green chillies 2 deseeded and roughly chopped
  • coriander a small bunch stalks roughly chopped and leaves torn
  • limes 2 zested and juiced
  • caster sugar 1 tsp
  • ready-cooked prawns 180g
  • red onion 1 thinly sliced
  • avocado 1 diced
  • radishes a handful quartered
  • cucumber ¼ diced
  • Little Gem lettuces 2 cut into chunky pieces
  • tortilla chips a handful crushed, to serve

  • Put the green chillies, coriander stalks, lime zest and juice, the sugar, a pinch of salt and 50ml of water into a small blender and whizz until smooth. Put the prawns and red onion into a large bowl, pour over the dressing and leave to marinate for 15 minutes, stirring occasionally.
  • Add in the avocado, radishes, cucumber, lettuce and coriander leaves, and toss again. Divide between 4 plates then sprinkle over a few crushed tortilla chips.

Ingredients
  

  • 1 cup couscous
  • kosher salt and pepper
  • 1 tablespoon olive oil
  • 1 pound peeled and deveined medium shrimp
  • 1 shallot chopped
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground paprika
  • 1 15.5- ounce can white beans rinsed
  • 1/4 cup white wine vinegar
  • 2 tablespoons chopped parsley

Instructions
 

  • Place the couscous in a large bowl. Add 1 cup very hot tap water and ¼ teaspoon each salt and pepper. Cover and let sit for 5 minutes; fluff with a fork.
  • Meanwhile, heat the oil in a large skillet over medium-high heat. Add the shrimp, shallot, coriander, paprika, and ½ teaspoon salt and cook until the shrimp are opaque, 4 to 6 minutes; transfer to a plate.
  • Add the beans, vinegar, and ½ cup water to the skillet and cook until warmed through, about 5 minutes. Serve with the shrimp and couscous. Top with the parsley.
