This quick and easy soup is low fat and ready in just 30 minutes. Fry some bacon pieces to sprinkle on top, or add a tin of chickpeas with the veg for a more rustic feel.

  1. Ingredients
  2. oil for frying
  3. ginger a small piece, peeled and grated
  4. cumin seeds 1 tsp
  5. chilli flakes a pinch
  6. onion 1, finely chopped
  7. carrots 2 large, peeled and grated
  8. red lentils 150g
  9. vegetable stock fresh, cube or concentrate made up to 1 litre
  10. lime 1, juiced to taste
  11. coriander a small bunch of leaves
  1. Method
  2. STEP 1
  3. Heat 1 tbsp oil in a large pan and fry the ginger and spices for a couple of minutes.
  4. STEP 2
  5. Add the vegetables and cook for 5 minutes more then add the lentils and stock.
  6. STEP 3
  7. Bring to the boil and simmer for 15 minutes, stirring occasionally until the lentils are tender. Blend until smooth or leave chunky.
  8. STEP 4
  9. Stir through a squeeze of lime juice and serve sprinkled with coriander.
